Roasted Garlic and Beet Pasta

This pasta is one of the single most delicious and creative creations that has come out of my kitchen. I was originally inspired by the beet root ravioli served at Daisies in Logan Square and have adapted the recipe in
the last several years. These are not veggie noodles- the beet pesto will actually infuse the noodles with their beautiful color.

Beets and garlic are PACKED with nutrients and are both super foods. And there is no cream or butter in this pasta. We will also saute up a little swiss chard that will be added in and the dish will be topped off with some orange zest. Even if this is outside of your realm, I guarantee this will become one of your new favorite dishes.
